History

The origin of fajitas can be traced back to the 1930s in the ranch lands of West Texas, where beef cattle were a primary source of income. The Mexican ranch workers were often paid with less desirable cuts of meat, such as skirt steak. To make it more palatable, the workers would marinate the meat in lime juice, grill it over an open fire, and serve it with flour tortillas. This dish became known as fajitas and eventually gained popularity throughout the United States.
